There are everyday treats – those ones you love, they are delicious, easy, healthy and readily available. And then there are those extra special treats. The ones that you make for someone’s birthday, a special occasion or just because you need that little extra something they have. There isn’t a layer of this slice that isn’t perfection!

And it all came about over a little pot of cherries. You see I saw this particular pot of cherries on offer in my local health food store and I must confess that curiosity got the better of me. I can’t resist cherries at the best of times and I was sure that something awesome would come from them.

Then of course I bought them home, placed them in the cupboard and proceeded to forget all about them until that is, last week when I was doing a blitz on my baking cupboard and lo and behold I found them!!!! And they were still in date! The original recipe idea I had for them was hidden in the back of last recipe journal so I immediately set to work – hey I didn’t want them to be forgotten again!!

They really do taste amazing and I just love the fruity bite of the cherries next to the smooth creamy almond and rich intensity of the chocolate.

I put the juice to one side and used it in a cherry almond green smoothie the next day – soooooooo good!

Chocolate Almond Cherry Brownie Slice

Makes: 18-24                              

Ingredients:

Base:

¾ Cup RealFoodSource Coconut Sugar Chocolate Drops

½ Cup Almond Butter

½ Cup Powdered Coconut Sugar

¼ Cup Maple Syrup

1½ tsps. Powdered Vanilla

1½ tsp. Almond Oil

¼ Cup Cocoa Powder

½ Cup Rice Flour

½ Cup Ground Almonds

2 tbsps. Non-Dairy Milk

2 tbsps. Non-Dairy Yoghurt

1½ tsp. Baking Powder

 

Almond Cream Layer:

½ Cup Cashew Nuts – soaked overnight

½ Cup Coconut Oil - Melted

½ Cup Maple Syrup

1 tsp. Almond Oil

¼ Cup Ground Almonds

1 tbsps. Non-Dairy Milk

 

1 Jar Cherries

 

Chocolate Topping:

½ Cup RealFoodSource Coconut Sugar Chocolate Drops

2 tbsps. Almond Butter

2 tbsp. Maple Syrup

2 tbsps. Non-Dairy Milk

1 tsp. Almond Oil

Instructions:

1) Preheat the oven to 170˚

 

2) Melt the chocolate drops in a bowl over a saucepan of boiling water. In a bowl combine thoroughly all the ingredients for the base then spoon into a lined 7” x 11” baking pan and place in the oven for 10 mins. Remove from the oven and allow to cool.

 

3) Drain the cherries from the jar and place juice to one side to use another time. Spread the cherries over the cooled brownies.

 

4) Blend together all the ingredients for the almond cream layer until smooth and thoroughly combined. Spread over the cherries and place in the freezer to set for an hour.

 

5) Melt the chocolate in a bowl over a saucepan of boiling water.

 

6) Remove from heat and slowly stir in the almond butter. Stir in the maple syrup, non-dairy milk and almond oil – keep stirring until completely smooth.

 

7) Spread over the set almonds cream layer and place in the freezer to set for 2-3 hrs.

 

8) Once set use a warm knife to cut into squares. Store in the fridge to keep firm. :)
